In order to complement sensory analysis conducted on our products, we equipped our laboratory with a Heracles Electronic Nose. On the one hand, the Heracles allows us to test all raw materials used in our reaction flavors. On a second hand, it enables us to achieve a quality control and a reproducibility follow-up of the production in our various sites. It also allows a control of on-process products. We observe a good correlation between the results obtained with our sensory panel and the Heracles. After some months of use only, we already get usable and relevant data.
