This rig is used to measure the firmness and stickiness of cooked pasta.
Strands of pasta are held on the texture analyser using a support block which accommodates a rectangular section exposing the pasta.
A rectangular compression platen is connected to the loadcell and is used to determine the firmness of the pasta during the compression stroke and the stickiness upon probe withdrawal.
