鉴别试验 钠盐及氯化物试验(IT-28及IT-12)阳性。
含量分析 准确称取预经在625℃下干燥2h后的试样约250mg,放入一具玻塞烧瓶中,加水50ml溶解。在搅拌下加入硝酸3ml、硝基苯5ml、0.1mol/L硝酸银50.0ml和硫酸铁铵试液(TS-99)2ml。充分摇震后用0.1mol/L硫氰酸铵滴定过量的硝酸银。每Ml0.1mol/L硝酸银相当于氯化钠(NaCl)5.844mg。
毒性 LD503000mg/kg(大鼠,经口)。
GRAS(FDA, §186.1750,2000)。
化学性质 无色至白色立方体结晶。相对密度2.16。纯品的吸湿性很小(临界温度73%,25℃),如含不纯物氯化镁,则吸湿性较大。熔点800℃。水溶液呈中性,5%水溶液的pH值为5.5~8.5。饱和食盐水的相对密度(d425)1.202,冰点在-20℃以下。易溶于水(1g/2.8m1,25℃;或1g/2.7ml,沸水)及甘油(1g/10m1),微溶于乙醇,不溶于盐酸。可含有2%的食用级抗结剂、自由流动剂和改性剂,其中包括亚铁氰化钠≤13mg/kg,或柠檬酸铁铵≤25g/100g。如系碘化食盐,则可含碘化钾0.006%~0.010%。
