近日，"咖啡致癌"事件霸屏，因为含有丙烯酰胺…… 那么丙烯酰胺究竟是什么呢?别慌，先喝口咖啡也无妨。 丙烯酰胺是食物中的碳水化合物和蛋白质，在高温烹制过程中“顺带”产生的一种物质。　　其实，咖啡豆本身并不含丙烯酰胺，是在烘培过程中自然出现的；这种物质其实很常见，不止咖啡里有，包括薯片、炸薯条、大麦茶、烧炒的菜肴等都有。丙烯酰胺在1994年被国际癌症研究中心列为2A类致癌物，可能对人身体会有致癌作用。 迪马科技技术人员也精心给大家准备了“食品中丙烯酰胺的检测”方案，大家可以边喝咖啡边看。 食品中丙烯酰胺的检测 1. 适用范围 本方法适用于食品中丙烯酰胺的测定。 2. 样品准备/提取(1)称取已粉碎(已均质)的样品1 g于15 mL离心管中，加入10 mL乙腈；涡旋混合2 min；4000 rpm离心1 min；(2)将上清液转移至50 mL离心管中，残渣按照步骤(1)重复提取一次；(3)合并两次提取液，再向提取液中加入20 mL正己烷，剧烈振荡5 min；(4)除去上层正己烷，将下层清液按照步骤(3)重复操作一次；(5)将下层清液转移至烧瓶中，加入4 mL水，混匀；(6)40 ℃减压旋蒸至小于2 mL，待净化。 3. 据新华社布鲁塞尔电 (记者张晓茹)某些食物高温油炸或烘烤时产生的化学物质丙烯酰胺存在致癌危险。欧洲食品安全局近日发布一份丙烯酰胺研究草案，征求公众意见，将来一旦审议通过，它将成为欧盟国家食品安全领域的决策参考。 　　这份草案由欧洲食品安全局下属的食物链有毒物质研究专家委员会起草。该委员会主席戴安娜· 本福德博士解释说，吃到嘴里的丙烯酰胺进入消化道，然后流向各个器官，并广泛进行新陈代谢。环氧丙酰胺就是这一过程的重要代谢产物之一，也是动物研究中导致基因突变和肿瘤的可能原因。 　　此外，该委员会还认为丙烯酰胺可能对神经系统、出生前后发育及男性生殖造成不利影响。不过，就目前饮食中摄入的丙烯酰胺水平来看，这些影响还不足以构成实质性威胁。 　　从7月1日起，欧盟国家的科学工作者或其他有兴趣的各方均可就这一草案在线提交评论，截止日期为今年9月15日，草案最晚于明年6月结束审议。届时，欧洲食品安全局将为欧盟决策者及各国决策者提供科学建议，比如是否应采取措施进一步减少食物中的丙烯酰胺，在饮食习惯和家庭烹饪方式方面是否应做出某些改变。 　　淀粉等食物在高温油炸等加工过程中，会发生一系列复杂反应，生成棕黑色的大分子物质&mdash &mdash 类黑精。咖啡、炸薯片、饼干、酥皮面包以及一些婴儿食品等可能含有丙烯酰胺。
