Overthepastyears,electronicnose(E-nose)technologyopenedhasenhancedthepossibilityofexploitinginformationonbehavioraromatoassessfruitripeningstage.Theobjectiveinthisstudywastoevaluatethecapacityofelectronicnosetomonitorthechangeinvolatileproductionofripenessstatesfortomato,usingaspeci?celectronicnosedevicewith10differentmetaloxidesensors(portableE-nose,PEN2).Principalcomponentanalysis(PCA)andlineardiscriminantanalysis(LDA)wereusedtoinvestigatewhethertheelectronicnosewasabletodistinguishingamongdifferentripenessstates(unripe,half-ripe,full-ripeandover-ripe).Theloadingsanalysiswasusedtoidentifythesensorsresponsiblefordiscriminationinthecurrentpattern?le.TheresultsprovethattheelectronicnosePEN2coulddifferentiateamongtheripenessstatesoftomato.Theelectronicnosewasabletodetectaclearerdifferenceinvolatilepro?leoftomatowhenusingLDAanalysisthanwhenusingPCAanalysis.UsingLDAanalysis,itwaspossibletodifferentiateandtoclassifythedifferenttomatomaturitystates,andthismethodwasabletoclassify100%ofthetotalsamplesineachrespectivegroup.SomesensorsinE-nosehavethehighestin?uenceinthecurrentpattern?leforelectronicnosePEN2.AsubsetofafewsensorsinE-nosecanbechosentoexplainallthevariance.Thisresultcouldbeusedinfurtherstudiestooptimizethenumberofsensors.
