It is a complex process which involves phenomena such as electromagnetics, heat transfer, mass transfer, and momentum transfer. Because of this complexity, most of the studies on microwave assisted extraction are experimental and are based either on comparison with other extraction techniques or on experimental optimization of the process. There is a need for a fundamental study of the microwave extraction process which would couple all phenomena aforementioned. Herein we discuss the basic phenomena involved in continuous flow focused microwave assisted extraction and the governing equations required to build a comprehensive model of the process.
