The stability of neotame is dependent on pH,
moisture, and temperature. As a dry powder, it is stable for at
least five years under proper storage conditions. In aqueous
systems, pH stability follows a bell-shaped curve at a given
temperature. The optimum pH for maximum stability is
about 4.5. As expected, stability decreases with increasing temperature.
